2 limes, unpeeled, cut in chunks and seeded
1/2 cup lime juice
1/4 cup cider vinegar
2 1/2 to 3 cups peeled, seeded cucumber
pinch of salt
1 package powdered pectin
4 cups sugar

I had misgivings about using the whole of the limes, and I wasn't wrong as this turned out horribly bitter. The limes were very thin-skinned with not much pith, but it was still enough to spoil the taste. I might try this again next time we have a glut of cucumbers, but I will just be using the lime zest and juice.
